Our terroir
The production area is located at the meeting point between the oceanic influence coming from the west, and the Mediterranean influence coming from the east. In addition, vines are subject to the effects of altitude, especially in the south of the area where some plantations are located at an altitude of almost 500 meters.
3 types of soil
The vine is planted on three types of soil: soils of detritic molasse, very heterogeneous and eroded; calcareous and clay soils of the Sparnacian, rich in red clay; ancient alluvial soils, in a plateau position.
4 Grape Varieties
Chardonnay: the clusters and berries are small. This variety has a very high qualitative potential and allows to elaborate dry white wines, sparkling wines and even liqueur wines. The sugar content of berries can reach high levels while maintaining a high acidity.
Chenin: The clusters are medium to large and the berries are small or medium. This variety can give, depending on the conditions of cultivation and according to the terroirs (limestone, schist) either sparkling wines or dry wines, or liquorous wines.
Mauzac a grape variety that is the identity of the terroir of the AOP Limoux (it can only be found here and in the vineyard of Gaillac), it is the reference variety of the AOP Limoux Blanquette de Limoux and the AOP Limoux Méthode ancestrale.
Pinot noir the clusters and berries are very small. Grape needing thermal amplitude and a certain freshness, it has naturally adapted to the terroir of Limoux where it is used in AOP Crémant de Limoux base wines both white and rosé.
